At Les Ambassadeurs by Christophe Cussac, the work of the sommelier team complements that of Chef Christophe Cussac, with a focus on creating precise and well-balanced pairings.

Frédéric Woelfflé, Head Sommelier, and his team curate a wine list that celebrates France’s great wine regions while opening up to a selection of international vineyards. Each wine is carefully selected to complement Chef Christophe Cussac’s cuisine and bring out the nuances of each dish.

With nearly 15 000 bottles and 1 300 references, including 180 Champagne references, the cellar offers an outstanding diversity of vintages, grands crus and grower wines. Among its rare and sought-after cuvées are P3 Dom Pérignon 1992, La Grande Dame by Veuve Clicquot, selected Cristal vintages by Roederer, and Vieilles Vignes Françaises Blanc de Noirs 2008 by Bollinger.

This diversity allows the Head Sommelier and his team to create pairings tailored to each of the Chef’s creations, while also leaving room for discovery. From great classics to more confidential cuvées, the wine list offers countless opportunities to explore the different expressions of terroirs, appellations and vintages.
