Discovering the Art of Japanese Living

At Yoshi, dining is much more than a culinary experience. Within a setting imagined by Didier Gomez and opening onto a Japanese garden designed by Jacques Messin, Japanese traditions come to life through a series of rituals that shape the dining experience and invite guests to discover the richness of Japanese culture.

Among them, the wasabi ritual holds a special place. A true culinary performance, it begins with the presentation of the fresh wasabi root, cultivated in a semi-aquatic environment fed by natural spring water. Grated à la minute in front of guests using a precise circular motion, the wasabi gradually releases its vegetal aromas, vibrant freshness and delicate marine notes. This meticulous preparation elevates Chef Takeo Yamazaki’s creations and transforms a simple condiment into a memorable moment of theatre and craftsmanship.

Another essential tradition is the preparation and service of matcha tea. More than just a beverage, matcha embodies a way of life deeply rooted in Japanese culture. Carefully prepared, it reveals the complexity of its aromas while offering a moment of calm and serenity, the perfect way to begin or conclude the Yoshi experience.

The journey continues through Yoshi’s curated selection of premium sakes. Each reference has been chosen for its distinctive character and its ability to complement the menu. Floral notes, exotic fruits, toasted aromas and subtle spices create a rich aromatic palette that enhances every dish and unveils new dimensions of Japanese gastronomy.

The spirit of sharing and discovery can also be found in the Bento Box, a true Japanese institution. Elegantly presented, it brings together a variety of specialties in a single refined setting, allowing guests to explore different flavours, textures and culinary techniques throughout one complete dining experience.

These rituals find their ultimate expression through the restaurant’s signature dishes. The Chindara no Saikyo Yaki, a black cod marinated for 72 hours, and the delicate Ebi Shinjo with shrimp and kombu perfectly illustrate Chef Takeo Yamazaki’s philosophy of blending tradition and contemporary creativity in every creation.

At Yoshi, every detail of the service contributes to an authentic immersion into the Japanese art of living. A journey where gestures, flavours and traditions come together to create unforgettable moments in one of Monaco’s most exceptional dining destinations.
